Converting Milk Into Cream Cheese

What is cream cheese?



Cream cheese is actually a form of cheese. Yes! Then why is it different from other soft cheeses in taste and texture? Ever wondered what gives cream cheese its smooth creamy texture, rich enough to be used as that wonderful spread to delight your mornings? This article will clear your doubts and make you a 'cream cheese expert.' Trust me!


Cream cheese is a mild form of cheese that is consumed fresh and not matured. It is whipped to give it a smooth, fresh cream-like texture and can be stored for 7 to 10 days if refrigerated in an air-tight container. The addition of acids like vinegar/lemon gives your cream cheese its unique tangy taste and feel.

How to make cream cheese at home?



Do you wanna experiment with some basic cooking this weekend? Try making a bowl of cream cheese to create drooling savoury dips! You will need just 3 things.











Ingredients

  • Full-fat milk (1 litre)

  • Vinegar (2tbsp)

  • Salt

Ready? Here we go!


Procedure

  • Take a litre of full-fat milk in a saucepan.

  • Heat until it boils and add two tablespoons of vinegar. (Don't stop stirring until your hands ache!)

  • When the milk starts to curdle, switch off the flame.

  • Lay a sieve with cheesecloth and pour the curd-whey mixture into it.

  • Play your favourite music until you wait for the whey to drain completely!

  • Once done, squeeze the cheesecloth containing the curds to remove the last drop of whey.

  • Then transfer the contents into a food processor, add some salt and process until it forms a smooth creamy texture. (Add a tbsp of water if needed).

Now, this is the right time to add in flavours of your choice. It can be some fresh vanilla scrapped off from the beans, mixed herbs, some garlic or chilli flakes, or anything that floats your boat.


And there you go!

An awesome mouth-watering velvety creamy cheesy dip is ready for your nachos. You can use it as a spread for your bagels, as a frosting for your cakes, or simply as a dip. You can pair it with just about anything and it feels just yum!
